Now I do tend to buy quality and have a pretty good selection of knives. I was bought this by a good friend and the first time I came to use it, cutting through a neck of lamb, I almost fell onto the chopping board, the knife cut that easily. It really was extraordinary. If you can't afford a Global knife - save harder! Well worth the money, and beats any other knife hands down.

1've had this knife for seven years now, and have at last got the knack of sharpening it, using japanese waterstones and global sharpening guides. The knife is superb - razor sharp when new and it kept it's edge for a long time. The blade on this knife (like other Global GS series) is thinner than European knives and the dimpled handle has a distinct feel to it. But this knife is designed to do just one thing - CUT. And it does this, superbly !! Slicing meat and vegetables eg potatoes, carrots, onions or tomatoes with Global knives is a real revelation - the blade just glides through effortlessly. I have tried other high priced European knives, but they feel cumbersome and blunter by comparison. I would recommend this particular Global knife as being the ideal all purpose kitchen knife. Buy one, keep it sharp, (I use a 10" Kyocera ceramic rod instead of a metal "steel" to hone the edge up) and believe me you will never need another knife. Unless, that is, you buy a set of Global knives (I did, after owning the above one for seven years).
Above all keep them sharp. Either take them to a professional sharpener about once a year, or buy a couple of sharpening stones (I recommend Japanese waterstones, available from specialist knife shops) and look up on the net how to do the sharpening yourself or obtain advice (ie tuition) from a specialist knife shop. Also, do use a ceramic rod daily to gently bring the edge back (sharper than) razor sharpness. Global sell a ceramic rod designed for their knives, but you can also buy the exact same rod much cheaper as a Kyocera Ceramic Sharpener CSW 18. NB don't try mashing garlic with the blade sideways like those fool chefs on TV. Global knives are precision tools designed to do just one thing - cut. Using them as a garlic crusher will ilkely snap the blade off.
